Tonight's dinner was shrimp & 4 cheese grits garnished with maple bacon. I have definitely eaten too much. I modified the hell out of a couple of recipes from Epicurious & Paula Dean. I used the basic grits recipe from Epicurious (though I didn't use low sodium chicken broth & I just used plain old Quaker old fashioned grits), but I added 1/2 cup of the bagged 4 cheese Mexican shredded stuff at the very end when the grits were cooked. Then I used maple bacon instead of regular bacon, with red onion & diced plum tomatoes instead of green onions and parsley. Oh and I skipped the lemon, but I still cooked the shrimp in the bacon grease. Next time I think I'll add more hot pepper to punch up the flavors a little, but overall it was a success. Mostly I am super geeked that I made proper grits from scratch. Now? Sleep. Lots of it.

I'll need to make them again today. Here's the recipe I used. I tend to measure by eye and this isn't quite the original recipe I found (I was looking for a recipe I used to make and found one that sounded close so I tweaked it until the batter looked right) so tweak away to your taste. I add cinnamon and vanilla into pretty much all my baking because I have issues, but the cinnamon in these brownies is just enough to kick up the overall flavor. 1/2 cup butter, melted
1 1/4 cup granulated sugar
1 teaspoon vanilla extract
2 eggs
1/2 cup flour
1/2 cup unsweetened cocoa
1/4 teaspoon baking powder
1/4 teaspoon salt
1/8 teaspoon Cinnamon (optional)
chocolate chips

In a large mixing bowl, blend butter, sugar and vanilla. Add eggs and beat well. In a small bowl, combine flour, cocoa, cinnamon, baking powder and salt; gradually blend into wet mixture. Spread batter in lightly greased and floured 8- or 9-inch square pan. Sprinkle top with semisweet chocolate chips. Bake at 350° for 20 to 25 minutes, or until brownies just begin to pull away from sides of pan. Cool for 15 minutes. Serve warm with vanilla ice cream.
